Broccoli is a really healthy vegetable and it goes with nearly everything but it can become a bit boring. This is a very simple way to pimp up your broccoli. The high-temperature cooking chars the exterior of the vegetables and adds a massive flavour hit. The drier edges and softer center also mean the dish is more interesting in terms of texture. The recipe is for broccoli but you can use a mixture of veg. A mixture of broccoli and cauliflower is a great combo. Because you oven roast and add color to the veg – it’s a great way to use up old veg that might not look great when steamed.

Prep The Veg

Heta the oven to 220C. Cut the broccoli (or broccoli and cauliflower) into medium-sized florets. In a large bowl, toss them in the olive oil, salt and pepper.

Bake

Place the veg on a baking tray and bake for 15 to 20 minutes until the edges of the florets are a nice brown colour.

Toss

Melt the butter and mix in the vinegar and mustard until well combined. Put the cooked broccoli back in your large bowl and add the butter ixrture. Toss and serve.
