80ml Olive Oil extra virgin olive oil
2 cloves Garlic minced
2 tablespoons Vinegar red wine vinegar
75ml Soy Sauce
4 tablespoons Honey
1/2 teaspoon Black Pepper

Your Steak

Flank steak is a cheap cut that is full of flavor however it can be chewy unless you cut it in the opposite direction to the muscle fibers – at a steep diagonal so that the slices are wide. You can of course use any type of steak you want for this recipe.

Internal Meat Temperatures

If you are not confident about how long your steak needs to cook use a food thermometer;

  1. 40C Rare
  2. 57C medium rare
  3. 63C for medium

It is always worth the extra time resting your meat after cooking because the meat becomes much more tender. 5-10mins is enough.

Make the marinade

Combine the marinade ingredients in a large non-metalic bowl, add the steak and coat it with the marinade. Marinade in a fridge for a minimum of 2 hours but 12-24 hours is best.

Cook your steak

When you are ready to cook the steak remove it from the fridge and allow it to reach room temperature for 20-30 mins. Sprinkle with salt and pepper. To cook it you want to sear it on high heat first to get some crispy, grungy bits and then finish cooking it on a lower heat. You can do this using a grill, BBQ, or in a pan on your hob. Sear it for 1-2 mins on each side first on very high heat then reduce the heat to finish cooking it to your liking. If you like it blue then the searing will be enough.
